Ingredients:

  • 1 cup uncooked quinoa

  • 1 can (5 oz) tuna, drained and flaked

  • 1 cup cherry tomatoes, halved

  • 1/2 cup diced cucumber

  • 1/4 cup diced red onion

  • 1/4 cup chopped fresh parsley

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • Salt and pepper, to taste

Cooking Instructions:

  1. Rinse the quinoa and cook it according to the package instructions.

  2. In a large bowl, combine the cooked quinoa, drained and flaked tuna, cherry tomatoes, diced cucumber, diced red onion, and chopped fresh parsley. Stir until well combined.

  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.

  4. Pour the dressing over the quinoa salad and stir until well combined.

  5. Serve the Tuna Quinoa Salad cold or at room temperature and enjoy!
