Quinoa and Black Bean Salad

Quinoa and Black Bean Salad:


  • 1 cup quinoa

  • 1 can black beans, drained and rinsed

  • 1 red bell pepper, diced

  • 1/2 red onion, diced

  • 1 jalapeño pepper, seeded and diced

  • 1/4 cup chopped fresh cilantro

  • Juice of 1 lime

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • Optional: avocado, diced

Cooking Instructions:

  1. Rinse the quinoa in a fine mesh strainer.

  2. In a medium saucepan, bring 2 cups of water to a boil.

  3. Add the rinsed quinoa to the boiling water and reduce the heat to low.

  4. Cover the pot and let the quinoa simmer for 15-20 minutes until the water has been absorbed and the quinoa is tender.

  5. Fluff the cooked quinoa with a fork and let it cool.

  6. In a large mixing bowl, combine the cooled quinoa, drained and rinsed black beans, diced red bell pepper, diced red onion, diced jalapeño pepper, and chopped fresh cilantro.

  7. In a small mixing bowl, whisk together the lime juice, olive oil, salt, and pepper.

  8. Pour the dressing over the salad and toss until well coated.

  9. Serve the Quinoa and Black Bean Salad chilled, topped with diced avocado if desired.
